Cabernet Sauvignon

As a popular tv show line goes “Winter is coming”. We surely agree: the season when our food demands fuller, bolder, richer wines is fast approaching! Therefore, light and crisp wines step aside because it is time to feature the king of red varietals, the one and only: Cabernet Sauvignon!

 

After all, the winter season it is all about layers – layers of warm clothing, layers of snow and layered wines that have a lot of dimension to them, in terms of aroma and taste. Believe us when we say this Cabernet Sauvignon 2013 from Thracian Valley has all the necessary layers. It is bursting with nice aromas of black forest fruits – blueberries and blackberries, black pepper and a hint of vanilla that comes from aging in new Bulgarian and Canadian oak barrels. With saturated, deep dark red color this Cab has balanced body with soft velvety tannins and long, elegant aftertaste. 

The best serving temperature for this wine is around 59 (15) - If the wine is above 64 (18) the alcohol volatility is increased and takes over from the true flavor of the Cabernet.

Pairing Tips

Cabernet Sauvignon is definitely a wine that does better with food than without it, as by itself, the wine can be overwhelming.

When looking for the ideal food pairing for Cabernet Sauvignon you don’t have to look very far. Almost any red meat, especially served rare, is going to do the trick. We all know that red meat and Cabernet are a match made in heaven. Needless to say the big and bold Cab makes its presence clearly known on the table, and it is a classic pairing with beef, lamb, spicy food and aromatic cheeses.

On another hand, Cabernet Sauvignon is a bit more difficult to pair with vegetarian dishes since its tannic structure begs for ingredients with fat, but that should not stop you: roasted eggplants with mushrooms pair perfectly and are a match to try.

 

 

December is a month filled with beautiful festive spirit and with all of its holidays approaching what better wine, than the king of reds, to drink, share and gift.  Every family has its own tradition when it comes to deciding what to put on the Christmas table, but if you go for a roast beef or prime ribs you know which wine to choose!
